We recently celebrated our twins’ third birthday with a “Three-esta” and these cupcakes were the perfect sweet treat to end the party with. Fiesta Lime Cupcakes

Yield: 18 cupcakes

Ingredients

  • 3/4 c butter, softened and divided
  • 1-1/2 c granulated sugar, divided
  • 1 tbsp grated lime peel
  • 2 lg eggs
  • 2 c all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp Kosher salt
  • 1 c sour cream, divided
  • 1/4 c + 2 tbsp lime juice, divided
  • 1/4 c + 1 tbsp skim milk, divided
  • 4 c Confectioners' sugar
  • 1/2 tsp pure vanilla extract

Instructions

Preheat the oven to 350 degrees F. Line 18 regular size muffin cups with paper liners and set aside. In a large bowl, beat 1/2 a cup of the butter and 1-1/4 cups of the granulated sugar with an electric mixer on medium speed until creamy. Add the lime peel and eggs, beating the batter until smooth and creamy, scraping the sides of the bowl if necessary.

Add the flour, baking powder, baking soda and salt. Beat on low speed until moistened. Add 3/4 cup of the sour cream, 1/4 cup of the lime juice and a 1/4 cup of the milk. Beat on low speed until mixed, then beat on medium speed until smooth and creamy. Spoon the batter evenly in the muffin cups, filling about 3/4 full. Bake for 20 to 24 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pans for 10 minutes, then remove the cupcakes from the pans to a cooling rack.

Meanwhile, in a small saucepan, heat the remaining 1/4 cup of granulated sugar and 2 tablespoons of lime juice over medium heat until the sugar is dissolved. Spoon the glaze over the warm cupcakes and cool completely, about 30 minutes.

In a large bowl, beat the remaining 1/4 cup of butter, 1/4 cup of sour cream, 1 tablespoon of milk, Confectioners' sugar and vanilla extract with an electric mixer on low speed until moistened. Beat on medium speed until smooth and creamy. Frost the cooled cupcakes and enjoy!
