Cherry Streusel Muffins | #SummerDessertWeek

It’s Summer and it’s Dessert Week! Does it get any better?

I’m a sucker for muffins, and when these Sweet Dark Cherries arrived on my doorstep from Rainier Fruits, it was love at first sight. They added an extra pop of sweetness to the muffins, which make a perfect little breakfast with a hot cup of coffee!

Cherry Streusel Muffins

Yield: 12 muffins

    For the Streusel Topping:
  • 1/4 c all-purpose flour
  • 2 tbsp unsalted butter, softened
  • 3 tbsp granulated sugar
  • 2 tbsp pecans (finely chopped)
  • For the Muffins:
  • 2 c all-purpose flour
  • 2/3 c granulated sugar
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp Kosher salt
  • 1/4 tsp ground cinnamon
  • 2 lg eggs
  • 8 tbsp unsalted butter, melted & cooled
  • 1 c whole milk
  • 2 c fresh dark sweet cherries, pitted & chopped

Preheat the oven to 400 degrees F and line a 12-cup muffin tin with paper liners; set aside.

To make the topping, in a medium bowl, whisk together all the topping ingredients until crumbly; refrigerate while you mix the muffin batter.

In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt and cinnamon. In a large bowl, beat the eggs with the cooled butter. Add the milk and whisk to combine. Slowly add the dry ingredients to the wet and stir just to combine; do not overmix. Gently fold in the cherries and pour the batter equally into the 12 prepared muffin cups. Crumble the streusel topping equally over the muffins and bake until golden brown and a toothpick inserted into the center comes out clean, about 20 minutes.

Let cool in the tins for 10 minutes, then remove to a wire rack and cool completely.

How perfect are these streusel muffins? I’m all about a streusel topping, but this time I’m all about those Rainier cherries!

I love muffins too! I make them on the weekends, normally on Sunday and then have them for breakfast during the week. I just think these are great!

So many delicious picks makes the decision so hard. I would have to say a fresh peach and strawberry galette is my favorite!

How have I never made a cherry muffin before? And of course you gotta have that streusel on top.
