We’re five days away from Christmas and while I’m hardly tired of Christmas cookies, every once in a while you just need a good ol’ chocolate chip cookie… or in this case, chocolate chunk.

I originally made these for sweet Wiley’s 1st Birthday Party, but was craving chocolate something fierce this week, so I took a detour from the gingerbread and molasses cookies and made a batch of these. It’s a standard cookie recipe, but with a substitution of hearty chocolate chunks instead of teeny chips. Completely worthy of a corner-shop bakery and your toughest critics.

Chocolate Chunk Cookies

Yield: approximately 2-1/2 dozen cookies


  • 16 tbsp unsalted butter, at room temperature
  • 1/2 c granulated sugar
  • 1 c light brown sugar, packed
  • 2 lg eggs
  • 2-1/2 tsp pure vanilla extract
  • 2-1/2 c all-purpose flour
  • 3/4 tsp Kosher salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1-1/2 (12 oz) bags chocolate chunks


Preheat oven to 350 degrees F. Cream the butter and sugar together in a stand mixer set to medium-high speed. Mix in the eggs, one at a time, until incorporated. Then, mix in the vanilla extract.

In a separate bowl, whisk together the flour, salt, baking powder and baking soda. Gradually add the dry ingredients to the butter & sugar mixture, until just incorporated. Then, gently fold in the chocolate chunks.

Place golf ball sized pieces of dough 2 inches apart on parchment paper-lined baking sheets. Gently press down on each to slightly flatten. Bake for 8-12 minutes, or just until the edges and bottoms begin to brown.

Allow to cool on the baking sheets for 5 minutes before removing to a wire rack to cool completely.
