Grilled Dijon-Maple Chicken

by Jessica on July 26, 2012

Deemed the “World’s Best Chicken,” this dish has been popping up on Pinterest like wild fire. And it was there that I decided to give it a try. However, baked chicken isn’t always my thing and I’ve had a hankering for grilled chicken almost every night of the week. So, I tweaked the recipe a bit, marinating the chicken breasts overnight and firing up the grill the next.

It’s a perfect Summer recipe… quick, easy, filling and very tasty. You may not consider it the “World’s Best,” but it sure comes close!

Grilled Dijon-Maple Chicken

Yield: 4 servings

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/2 c Dijon mustard
  • 1/4 c maple syrup
  • 1 tbsp red wine vinegar
  • Kosher salt & pepper, to taste
  • Fresh rosemary (optional)

Instructions

In a small bowl, whisk together Dijon mustard, maple syrup and vinegar. Season chicken breasts with salt and pepper. Then place the chicken in a large Ziploc bag, and pour the mustard mixture in. Marinate in the refrigerator for an hour or two.

After marinating, preheat grill to medium heat. When ready, grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Transfer chicken to serving dish. Sprinkle with fresh rosemary, if using, and serve.

As soon as I saw the name of this dish, i was hooked too. I have some chicken fillets thawing in the fridge – perhaps they are destined for something more interesting than my usual stir fry!

Anthing with Dijon mustard (and, I go with the “country” version) gets my vote. Add to that, grilling it, getting the heat our of the kitchen, and it’s a winner. It looked delicious.
