This is another recipe that was badly in need of an updated photograph. I originally posted this chicken four years ago this month and I’m ashamed of the photo that accompanied it then. Fortunately, to abate my absurd obsession with perfection, I can change things like that. As mentioned below, this is a super-easy chicken recipe that is a classic when it comes to Summer Grilling.
With company showing up in less than 30 minutes, I needed something great and I needed it fast! So, I reached for my copy of ‘Best Chicken Recipes’. And guess what?? I found this little gem and it WAS good. So much so, that I’ve made it several times since!
1/2 c loosely packed fresh cilantro leaves, chopped
From limes, grate 2 tsp peel and squeeze 1/4 juice. In a small bowl, with a fork, mix honey, garlic, coriander, salt, pepper, lime juice and 1 tsp lime peel.
Place chicken in a large Ziploc bag. Drizzle lime mixture over chicken and marinate in the fridge for 3-4 hours. Preheat grill to medium heat. When ready, grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Transfer chicken to serving dish. Sprinkle with cilantro and remaining 1 tsp lime peel and serve with lime wedges.
