Independence is such a sacred thing and one that we sometimes take for granted. So, this month on ‘Live Sigma Kappa’, we’re bringing it to the forefront, making it a topic of discussion.
Today’s post features my thoughts on freedom and these ‘Firecracker’ nachos, perfect for appetizers during your Fourth of July cookouts and picnics. They’re quick, easy and make for delicious little bites of that beautiful red, white and blue!
Ingredients
- Blue corn tortilla chips
- Monterrey Jack cheese, shredded
- Salsa or pico de gallo
- Sour Cream
- Refried beans (optional)
Instructions
Preheat the oven to 350 degrees F. Place blue corn tortilla chips on a foil-covered baking sheet coated with cooking spray. Spread a tablespoon or two of refried bean on each chip, if desired, then sprinkle with shredded Monterey Jack cheese and bake for 5 to 7 minutes.
Top the nachos with salsa and sour cream and serve!

Love nachos. Love this take on them. I am a Pi Beta Phi (Florida State University) but will make these anyway! I hope you had a Happy 4th.
