
If you’re anything like me, there are certain times of the year when you’re jonesing for a really good chocolate-chip cookie. Either that or a silky, peanut butter version. And since I’m no where near a sweet-smelling, corner shop bakery, I’ve gotta roll up my sleeves and make my own.
No worries there, though! With this batch, cravings for both types of cookie are satisfied. Dark chocolate chips and peanut butter ones, too, swirl decadently in the batter, made good for you with a little Heart-Smart Bisquick® baking mix. Now, I’m not a spokeswoman or anything (Bisquick®, I’m available for promo work!), but this stuff is so versatile and can be used in so many different recipes… both savory and sweet! The mix lends itself to a thick, but pillowy-soft cookie, which is exactly how I like ‘em. Just give me a tall glass of ice-cold milk and we’re in business!

Ingredients
- 1/2 c unsalted butter, at room temperature
- 1 c light brown sugar, packed
- 2 tsp pure vanilla extract
- 1 lg egg
- 2-3/4 c Heart-Smart Bisquick® baking mix
- 1/2 c dark chocolate chips
- 1/2 c peanut butter chips
- 1/2 c pecans, chopped (optional)
Instructions
Preheat oven to 375 degrees F. In a large bowl, cream together the butter, sugar, vanilla extract and egg. Stir in Bisquick® mix, dark chocolate & peanut butter chips and nuts, if using. Chill dough for 15 to 20 minutes.
Remove dough from refrigerator and drop by rounded tablespoonfuls onto a parchment paper-lined baking sheet, about 2 inches apart. Flatten slightly and place sheet in oven. Bake for 8 to 10 minutes, or until cookies are golden brown. Remove cookies from the baking sheet and cool completely on a wire rack.

MY baking heart is pumping wildly right now Jessica. Since I’ve been food blogging and realizing that Sandra Lee is a dirty word, I haven’t even thought, let alone written about, short cuts and quickies. You’ve now given me permission and I have that heart-smart stuff on this week’s shopping list (didn’t even know Bisquick went the heart-smart route). My grandchildren are going to be loving me.
