
After all these giveaways and winner announcements, I’m sure you’re itching for a sweet post… I know I am, at least! Not only are these muffins sweet, but they’re good for you and super-easy to put together, too. Just one bowl, one mix, a can of pumpkin and you’re in business!
I’ve had them on my to-do list for quite a while now and over this past weekend, I was craving a mid-day treat something fierce. I’d cleaned the house from top to bottom, washed and folded several loads of laundry, had a nice little workout and then headed to the kitchen to satisfy my sweet tooth. I had these whipped up in less than 30 minutes, including time in the oven. And the final verdict? Craving obliterated!
Ingredients
- 1 (18.25 oz) box devil's food cake mix
- 1 (15 oz) can pure pumpkin puree
Instructions
Preheat oven to 400 degrees F. Pour cake mix into a large bowl and whisk to remove any lumps. Add pumpkin and stir until completely smooth and uniform.
Don't add any other ingredients that may be mentioned on the cake mix box, like eggs, oil, or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter thinner, but don't.
Evenly distribute batter into a 12-cup muffin pan lined with baking cups and/or sprayed with nonstick spray. Place pan in the oven and bake until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes. Allow to cool slightly and then serve.

Well just made them, just like cake, very good, can’t taste any pumpkin, I’m amazed, more we want more! I’m always shopping sites for winner things I can make with less fat and sugar.
