
I think I’ve found my new favorite appetizer. By using fat-free ricotta cheese as the main ingredient, it’s fairly good for you… and it only takes a few minutes to prepare. The worst part of it is waiting the three to four hours for the flavors to meld together. The smooth ricotta, mixed with olive oil, fresh garlic, parsley and chives is outstanding and absolutely perfect for a summer get-together out on the patio. It’s light texture is wonderful on crackers, artisan bread and I’m sure on pizza. Can’t wait to give that one a try!

Pizza actually sounds good to me with this spread. I thought it went well with tomatoes and I’m thinking a drizzle of pesto sauce and…….. it is limitless. Most people like it with bread so why not pizza dough!
It would be great for a summer evening on the patio!

Jessica, I loved this. Easy to make. Can use it in so many ways. It just needs to be bumped up in flavor a bit and I am trying to figure that out. A little tinkering, perhaps.

Great minds think alike! If I go to a pizza place that offers ricotta with the toppings I usually get it. Flavored ricotta would be even better!
