Pesto Double-Stuffed Potatoes

This month’s Idaho® Potato “Recipe of the Month” Photo Contest features their ‘Pesto Double-Stuffed Potatoes’. They’re an incredibly easy side dish to prepare for dinner, or even as a quick & nutritious lunch. We enjoyed them last night on the patio, alongside grilled chicken breasts and a bright, colorful salad. Totally delicious… made even more so by the beautiful weather!

“A fun twist on classic twice-baked potatoes, these ‘Pesto Double-Stuffed Potatoes’ are easy to prepare and impossible to resist. They’re packed with a flavorful blend of tender mashed Idaho® potatoes, creamy ricotta cheese and rich pesto, and baked in their shells until golden brown. These festive spuds are the perfect addition to your St. Patrick’s Day spread, and so delicious you’ll want to make them all year long!”

Pesto Double-Stuffed Potatoes

Total Time: 45 minutes

Yield: 4 servings

Ingredients

  • 4 lg Idaho Potatoes, baked
  • 1/2 c part-skim ricotta cheese
  • 1/3 c prepared pesto
  • 1/4 tsp Kosher salt
  • 1/4 tsp pepper

Instructions

Preheat oven to 450 degrees F. Cut each potato in half lengthwise; scoop inside of potatoes into a bowl, leaving a 1/4 inch-thick shell. With fork or potato masher, mash cooked potato in bowl. Stir in ricotta, pesto, salt and pepper until well-blended. Spoon potato mixture into potato shells, divided evenly, heaping on top if necessary.

Line baking sheet with parchment paper and place stuffed potatoes on top. Bake until golden brown and heated through, about 10-15 minutes.
