This month’s Idaho® Potato “Recipe of the Month” Photo Contest features their ‘Pesto Double-Stuffed Potatoes’. They’re an incredibly easy side dish to prepare for dinner, or even as a quick & nutritious lunch. We enjoyed them last night on the patio, alongside grilled chicken breasts and a bright, colorful salad. Totally delicious… made even more so by the beautiful weather!
