Excuse the quick post, as I’m on my way home from a long (and very tiring) business trip up to Pittsburgh. Since we were driving close to twenty hours, we needed some serious road-trip food and I figured that muffins would make for better single-serve snacks than an entire cake. And boy, was I right! These were perfect with our morning coffee and also, quite a treat after eating hotel breakfast food for a week.
