Apple Nut Muffins

Excuse the quick post, as I’m on my way home from a long (and very tiring) business trip up to Pittsburgh. Since we were driving close to twenty hours, we needed some serious road-trip food and I figured that muffins would make for better single-serve snacks than an entire cake. And boy, was I right! These were perfect with our morning coffee and also, quite a treat after eating hotel breakfast food for a week.

That really was a lot of riding in the car for you all!! Glad you had the muffins with. This was a good recipe and I think it would make great muffins. I sort of wish I had done those instead of the square cake. Maybe next time!!

I love the muffin idea! Im sure it was a nice little treat to have on the road! I drizzled caramel on mine !

These would make excellent muffins. Soooo full of goodies. Hotel b’fast gets old after a while.
