Cornmeal & Fruit Loaf

There’s nothing better than a piece of cornbread… filling, sweet and a little crunchy, with succulent kernels of corn and a nice slab of butter.

The recipe title sounded odd when I read it aloud, but I’m really glad I didn’t skip this one. And I’m doubly glad that I subbed nectarines for the apples and added in sliced almonds instead of dried fruit. The cinnamon and nutmeg brought out the sweetness of the nectarines and the almonds gave off just enough crunch. It was perfect alongside a steaming cup of coffee this past Sunday morning… and I’m just sad that there’s not even a crumb left. 🙂

I have been baking with cornmeal a lot as of late and love the extra little crunch it gives baked goods. Along with the fruit, I imagine this loaf tasted absolutely divine.

Yours looks so good with the nectarines. I bet almonds added a nice crunch. I made mine with apples and it was very good.

I love the golden brown color of this bread! Im sure it tasted yummy with nectarines! It looks great!

The nectarine looks like jewels in the bread. That is a good choice to make. The beauty of this is that we can sub almost anything, any fruit, nut, dried fruit or coconut.

Well your bread certainly looks great! I should have just gone with the recipe and added nuts instead of the dried fruit. Maybe I’ll try it sometime as a loaf!

wow jessica, this loaf looks absolutely beautiful with the nectarines studded here and there! i’m glad you liked it, but now i’m sad that i don’t have any left to have along with a cup of tea on a lazy morning off 🙁 excuse to make more, i think so!!
