Have you ever experienced the greatness that is Chuy’s? With dishes such as the “Big As Yo’ Face” Burrito and the Chicka-Chicka-Boom-Boom, how could you not? The ultimate must-try on their menu, though, isn’t even a true dish, but one of their signature sauces… the Creamy Jalapeño. I could seriously drink this stuff from a glass. And as soon as we’re seated, I’m already ordering a bowl… even before I have a Texas Martini in hand. It’s that good.

Chuy’s Creamy Jalapeño Dip
3 c homemade Ranch dressing (recipe below)
1/4 c roasted green chilies
1/4 c sliced jalapeños
3 tbsp fresh cilantro leaves
1/2 Roma tomato, diced
Pulse all ingredients in a blender in batches until smooth. Chill for at least an hour, then serve.
Homemade Ranch Dressing
Adapted from: The Pioneer Woman
1-2 cloves fresh garlic
Salt (to taste)
1/4 c Italian flat-leaf parsley
2 tbsp fresh chives
1 c mayonnaise
1/2 c fat-free sour cream
Buttermilk (as needed for desired consistency)
Mince the garlic with a knife and then sprinkle about an 1/8 to 1/4 teaspoons of salt on it and mash it into a paste with a fork. Chop the parsley, chives and any of the optional herbs very finely and add to the garlic.
In a large bowl, combine all ingredients… tasting frequently and adjusting seasonings as needed. Chill for a couple of hours before serving, thinning further with milk or buttermilk if desired.
