Diet Spice Cupcakes

A cupcake with no egg yolks or butter? Count me in. And only 2 points each? I’m there!

I’d seen this recipe all over the Weight Watcher boards and among some blogs, namely Gina’s Skinny Recipes, so I figured it was high time to give it a try. Oddly enough, I had a (gasp!) box mix hiding in the cabinet that needed to be used. I wish I could blame a few kiddos for secretly throwing the box in my grocery cart without my knowledge, but alas, I have no kids. This one, I’m owning up to… but just this once! The cake comes together very quickly and with only a few simple ingredients. This is another super treat for those times when I’m a few points shy of my daily target. I can just throw ’em in my bag and I’m good to go. And how about that, it’s snack time!

OMG, Fresca? That so reminds me of my high school days! Plus, it’s even better now that you’ve included it in cupcakes!

These look so good. I love spice flavor and it sounds like it will be nice for summer and lower in calories are in need!
