A cupcake with no egg yolks or butter? Count me in. And only 2 points each? I’m there!
I’d seen this recipe all over the Weight Watcher boards and among some blogs, namely Gina’s Skinny Recipes, so I figured it was high time to give it a try. Oddly enough, I had a (gasp!) box mix hiding in the cabinet that needed to be used. I wish I could blame a few kiddos for secretly throwing the box in my grocery cart without my knowledge, but alas, I have no kids. This one, I’m owning up to… but just this once! The cake comes together very quickly and with only a few simple ingredients. This is another super treat for those times when I’m a few points shy of my daily target. I can just throw ’em in my bag and I’m good to go. And how about that, it’s snack time!
Diet Spice Cupcakes

Yields: 24 cupcakes, 1 per serving
1 dry box cake mix, Spice flavor
1 (12 oz) can Fresca, Original flavor
2 egg whites
Cool Whip Free (optional)
Preheat oven according to box directions and line two cupcake pans with liners. Beat cake mix, Fresca and egg whites together. Divide batter equally into the 24 liners.
Bake as directed on box, or until toothpick comes out clean when inserted. Let cupcakes cool completely, then top with fat-free whipped cream if desired.
