It’s a breezy 84 degrees here in the northern part of the Lone Star State and C will be back in town tonight… which means that our weekend will be packed with grilling-out, getting our Wii on and having fun with close friends.

I love entertaining guests, but I always tend to get a little nervous that things won’t be made in time. This dip, however, is a total cinch to put together… and it doesn’t take more than 5 minutes. My advice to you on this gorgeous Spring Thursday: make this dip right now. You won’t regret it, but you possibly could be craving more once it’s gone! ūüôā

Cool Fiesta Corn Dip

Yield: Approximately 12 (4 tbsp) servings


  • 2 (11 oz) cans of fiesta corn, drained
  • 3 green onions, diced
  • 1/3 c light mayonnaise
  • 1/3 c light sour cream
  • 1 tbsp lime juice
  • 3 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp Splenda for Baking


Combine all ingredients together in a large bowl and refrigerate for at least one hour. Serve with Frito or Tostitos Scoops (which will change the Points value).

Mmm, looks delicious! I bet some cilantro would work well in this dip!
