I’m not a big fan of currants. You won’t find any in my Irish Soda Bread, or last week’s Beggar’s Linguine and certainly not in these Citrus
Currant Sunshine Muffins (sorry Lauryn & Dorie!). What you will find is a burst of orange and lemon flavors with the added bite of dark chocolate chips. Quick to put together (literally, less than 30 minutes from start to finish) and perfect for a Saturday morning breakfast on the patio, complete with coffee and a cool breeze.
