Citrus Sunshine Muffins

I’m not a big fan of currants. You won’t find any in my Irish Soda Bread, or last week’s Beggar’s Linguine and certainly not in these Citrus Currant Sunshine Muffins (sorry Lauryn & Dorie!). What you will find is a burst of orange and lemon flavors with the added bite of dark chocolate chips. Quick to put together (literally, less than 30 minutes from start to finish) and perfect for a Saturday morning breakfast on the patio, complete with coffee and a cool breeze.

Very pretty! Dark chocolate sounds like a great variation… when is it not a great variation? 🙂

That is such a great image to start the moning off..these muffins, with coffee on a patio and a nice cool breeze! They look great! I added chocolate chips to some of mine too, they are so tasty!

dark chocolate and orange is a killer combo. i’d love to have one of these muffins. i didn’t have currants so i used raisins.

I love that you added chocolate chips to these. I think mine could have been a little sweeter so the chips would have been good in them. HOpe you are having a great week.

I bet these were great with dark chocolate! I like currants so I added those, but I guess a lot of people don’t like them.

I went with dates because I love them–but not as much as dark chocolate. Your muffins look so delish.

I feel your hesitancy about the currants. I would probably leave them out because I don’t care for currants and raisins. But, the muffins look great regardless!
