Meyer Lemon Drops

I love coming home from a trip. Walking into your comfortable home, sitting on your familiar couch, sleeping on your fluffy pillows… and baking in that favorite room of the house, the kitchen. And with the weather as beautiful as it is, it made me long for those breezy Spring and Summer days that are just around the corner. Luckily, I had an extra Meyer lemon waiting on me when I walked in the door Monday night. Fate seemed to line everything up perfectly, too: the weather, the ingredients, the recipe and finally, the end result. A buttery little cookie that satisfies my sweet tooth and has me dreaming of hammocks and chilled glasses of lemonade. Welcome Spring… you’re only 20 days away. 🙂

Meyer Lemon Drops

Meyer Lemon Drops
Adapted from: Weight Watchers

Yields: Approximately 50 cookies (2 cookies per serving)

1/2 c unsalted butter
1/4 c + 2 tbsp Splenda for Baking
1 tsp Meyer lemon zest
1 tsp baking powder
1/4 tsp baking soda
2 lg egg white(s)
1/3 c fat-free skim milk
1 tbsp fresh Meyer lemon juice
1-3/4 c all-purpose flour

Preheat oven to 350 degrees F. In a large mixing bowl, beat margarine with an electric mixer on medium-high speed for 30 seconds. Add sugar, zest, baking powder and baking soda; beat until combined, scraping sides of bowl occasionally. Add egg whites, milk and lemon juice; beat until combined. Beat in as much of the flour as you can with the mixer and then stir in remaining flour by hand.

Drop dough by rounded teaspoonfuls, 2 inches apart, onto 2 ungreased cookie sheets. Bake until edges are lightly browned, about 12 minutes. Transfer cookies to a wire rack and let cool. Repeat with remaining cookie dough.

wow can’t believe that’s a WW recipe!

you are right… even though it’s great to get away there is nothing like coming home and plopping into your bed and having that feeling of “home sweet home” 🙂

I’ve been working on some Meyer lemon squares and happen to have some Meyer lemons in the fridge. Can’t wait to try this although I’m surprised it is WW approved with all that butter. Guess you can eat anything if the portion is small enough. 🙂
