French Fridays with Dorie – Pancetta Green Beans

C is an avid ham fan, so I was pretty excited when this recipe came up… knowing that it was a side dish he’d definitely eat and most importantly, love. Unfortunately, he’s been working extra shifts this week, so he wasn’t able to try them this go-round. I say ‘this go-round’ because I’ll be making these beans again very soon. They’re quick, easy and taste almost as good as my grandmother’s recipe (which is truly Southern)… buttery and salty, with that extra crunchiness from the pancetta. Yum!

I’m upset that I missed my first FFwD last week, but being the only one in the house (and watching what I eat, to boot), a big ol’ cream tart sitting around would’ve been too tempting! I’ll be missing out next Friday, as well, due to a week-long work trip. But never fear, I’ll be back! Don’t forget to check out the ‘Leave-Your-Link’ post to see the other bean dishes from this week. I’m hungry just looking at your pictures! The peach tart should definitely be tried when you have a few people at home!!

I was bummed about missing the tart last week too, but for the same reasons you had , I had to skip!
Im glad the beans were a hit! They look good and healthy!

I agree, the green beans were great!

You can always make up the tart in the future, and do a double FFwD post!

I loved this recipe and your dish looks wonderful! It’s always nice to have another vegetable dish that we love to eat.

Your photos are absolutely amazing – I feel like they belong in a cookbook ! Nana and I each had great results with this dish and were also delighted to have such an easy one this week 🙂 This will be a repeat many times over for us.

Your green beans with pancetta look soooo good! Glad you’ll be making them again soon. Me too, only this time I’ll use the pancetta. Love how you described it as being crunchy! Lovely pictures too!

Your beans turned out well! You should try the tart some time – it’s a great special occasion dessert. I’m looking forward to trying it with other fruits, in season.

I give you credit for making the dish knowing that your husband would not partake:)
We liked the beans, and I was pretty happy with their simplicity – gave me enough time to rebound and get back into game.
