Caramel Pumpkin Pie

Last night, the Texas Rangers shutout the NY Yankees to win Game 3 of the ALCS and (not to toot my own horn, but) I made a gorgeous pie… it must be fate.

The Pie Gods were definitely looking over me while I made this. The crust was buttery and flaky, the filling spicy, smooth and rich. I even ate a piece for breakfast this morning. Yes, breakfast… forget whole grains and protein. It’s more fun to sabotage the diet. And hey, pumpkin has protein in it. :)

You DO make a beautiful pie. Wasn’t this good. I loved how the caramel/rum enhanced the pumpkin flavor. YUM!!

Your pie is gorgeous! I love the colour–mine was too dark, from the caramel I guess. The leaves are a pretty touch, along with the leaf plate. Very seasonal!

I ate my pie for breakfast too Jessica :) Your pie does look stunning, I especially love the way you jazzed up the crust.

Oh, and I’m right there cheering for the Rangers with you. More because I hate the Yankees, but nonetheless rooting for them!

Those leaf-shaped cut-outs are adorable! Nice touch.
Pumpkin does contain protein + it’s a vegetable. So by default, eating a slice of pie is acceptable any time of day. :~)

I am certainly no baker, but does this recipe make the caramel or do you buy it and melt it. Caramel is not in the ingredients.

Gorgeous! I plan to make this for tomorrow. Did you really prebake the crust per the recipe? I feel like prebaking makes my pie crust too hard. Thanks!

Hi Christina! Yes, I blind baked it – but not as long as was called for. My oven likes to burn things! :)
