All kinds of things are going on right now around the Hornedfroggy household, so it wasn’t until early this morning when Melissa’s Lemon Pecan-Sour Cream Pound Cake came out of the oven. I only tasted the thin ends I cut off, because sadly, I’m taking it to a dear friend’s wake this evening.
I first met Doña Susana and her husband, O, when I was fairly young… probably 8 or 9 years old. She eventually became my high school Spanish I & II teacher, but it was O who I saw more of. He and my dad were such great friends, but unfortunately, O lost his seven-month battle with leukemia two nights ago. I am very heartbroken for O, S and their family. He was a wonderful man and he will truly be missed.
The lemon flavor was pretty prominent and the cake was very moist… all in all, a nice pound cake that I’d definitely make again. Even though butter is already called for, I did sub more for the shortnening (one for one) and I used pecans instead of walnuts. What a sad moment in time and I hope you can bring comfort to yourself and family through all the wonderful memories shared. The lemon pound cake is a great dish to bring. Kind of a cheerful color and flavor for such a somber time.
