
While reading up on this week’s choice, I thought about my momma, otherwise known around MBH as ‘Momma G’. She loves bananas and banana bread, especially when there are pecans or walnuts added in. And she makes a mean banana bread, too… the recipe of which came from my grandmother. So, while Dorie’s recipe was good, I’d be in big trouble if I said it was better than my grandmother’s!
For this one, I added in Momma G’s beloved pecans and also subbed coconut extract for the vanilla. The coconut flavor really didn’t come out as much as I would’ve liked, but it was still yummy… the house smelled DEE-licious while the mini bundts were baking, too! And after unmolding them, they were adorable! Bonus!
