Tuesdays With Dorie – Classic Banana Coconut Bundt Cake

by Jessica on August 4, 2009

Banana Coconut Bundt

While reading up on this week’s choice, I thought about my momma, otherwise known around MBH as ‘Momma G’. She loves bananas and banana bread, especially when there are pecans or walnuts added in. And she makes a mean banana bread, too… the recipe of which came from my grandmother. So, while Dorie’s recipe was good, I’d be in big trouble if I said it was better than my grandmother’s! 🙂

For this one, I added in Momma G’s beloved pecans and also subbed coconut extract for the vanilla. The coconut flavor really didn’t come out as much as I would’ve liked, but it was still yummy… the house smelled DEE-licious while the mini bundts were baking, too! And after unmolding them, they were adorable! Bonus!

Love the mini’s.

I wonder if you had added actual coconut to it might have helped the flavor.

I love the idea of the coconut instead of the vanilla, that is a fabulous idea!! Secondly, those little mini bundt shapes are adorable. Did you watch True Blood last Sunday? OMG – Crazy. So much is going on. I don’t think Jason was killed, do you?

Your mini bundt cakes are so cute! Now, I need a mini bundt pan. I thought about adding nuts, but hubby wanted chocolate chips.
