Butterscotch Cashew Bars

I love cashews and completely agree with Melissa when she says that they’re not used nearly enough in baking. So, I was really excited when I found out about this week’s SMS choice. Melissa’s recipe is really simple and takes little time to put together… the toughest part is waiting for the bars to cool! 🙂 I took them to the bff’s housewarming party yesterday and they were a hit. I even gave out the recipe to 3 guests (I love this book!)!

I just love cashews and I’m glad that they were in this recipe. Your shortbread base looks really great, as does the whole cookie! Thanks for baking along with me this week.

I’m glad they were a hit at the party you went to! I agree – Cashews are an underused resource in baked goods!! Thats why I loved this recipe so much!

Cashews are so yummy that they don’t last in this house. Of course, these bars wouldn’t make it very long either. They look great!
