Happy Cinco de Mayo!
Several friends are coming over this evening and I immediately knew what to make for ‘Happy Hour’… my favorite margaritas in the whole world. I could seriously drink an entire pitcher of these. Now, that wouldn’t be very responsible of course, but hey, I’m at home and I’m not driving, right??

Coconut Margaritas
4 c ice
4 tsp Cream of Coconut (Coco Lopez)
8 oz pineapple juice
4 oz tequila
8 oz Sweet & Sour mix
2 oz orange-flavored liqueur (Triple Sec)
Lime wedges
Sugar
Place ice in a blender and add remaining ingredients except for the lime wedges and sugar. Blend until slushy. To make the margaritas thicker, add more ice and blend.
Rub rims of glasses with a lime wedge, then dip the rims in sugar. Pour margaritas and enjoy!
Makes approximately 4 margaritas.

Good Idea I never thought of this. I am going to try it. My favorite is a vanilla margarita but coconut seems even better.

Oh I love ritas, and coconut, but never combined the two, must remedy that injustice right away!
