Tuesdays With Dorie – Coconut Butter Thins

Wow. These are so good… and perfect for making it feel like Summer in the house. 🙂 Fortunately, I read this week’s P&Q before I started – and by taking a fellow TWDer’s advice to freeze the dough before baking it, I had less problems with spreading than normal. There was a bit of it in the end (as you can see), but it wasn’t too bad. They were still really tasty and I managed to chomp down on 3 of them while photographing… which can’t be good for the diet!

oh don’t worry.. i chomped down more than that in the course of taking my shots. These were good albeit for the spreading. Love the coconut in them too!

Yes, with two sticks of butter in there (and coconut and nuts…), the word “thins” really doesn’t apply.
