Irish Soda Bread

So, bread and I have this thing going on. We’ve been together for quite a long time. Now, I love me some Sourdough (by the way, the best out there is from Market Street; no contest.) But, last night (and I hate to toot my own horn) I made some of the best bread I’ve ever had. Period. And, it wasn’t Sourdough.

We had an Irish Potluck at work today, so I decided to make 4 loaves of Irish Soda Bread. And it was amazing. AMAZING, I tell you. I think I might’ve found my new bread. Psst… don’t tell Sourdough! 😉

Irish Soda Bread

5 c all-purpose flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
4 tbsp sugar
4 tbsp butter, at room temperature
1-3/4 c buttermilk
1 egg
1 c currants (omitted)

Preheat the oven to 375 degrees. Sprinkle a little flour over a large baking sheet. Put all the dry ingredients into a mixing bowl and work in the butter with your fingertips until the mixture is crumbly and even in texture. Make a well in the center and pour in the buttermilk. Add the egg and beat well with a wooden spoon to distribute the egg into the buttermilk. Continue to mix with the spoon until all the flour is wet, then knead with your hand just to complete the mixing. Add the currants and mix them in.

Cut the dough in half and shape each half into a ball. Put them on the floured baking sheet at a distance from each other. With a knife dipped in flour after each cut, make a deep cross across each loaf, almost – but not quite – to the bottom. Bake for 40 minutes, until golden brown. Cool on wire racks and do not cut until thoroughly cold.

And talk about luck… the egg was double-yolked!! Happy St. Patrick’s Day!! 😀

Those look amazing! I just made Irish soda bread for the first time too. It’s such a nice easy bread to throw together 🙂

Looks delicious. I love Irish Soda Bread and missed not having any this year. Thanks for the tip on the Market Street Sourdough, I’ll have to grab a loaf next time I’m there.

You always get double yolks!! You must be uber lucky or something… Bread looks great – I’ve always wanted to try it..maybe I will soon!
