Walnut Waffles

It’s Sunday morning at 9a, and I wake up to a phone call requesting waffles in my new heart waffle iron. Yes, Mom called for waffles. Unfortunately, when I opened the box, the iron had a missing piece on the warning light, so it’s back to the store I’ll go to exchange it. However, Mom still wanted waffles, so I knew I had to deliver. She loves pecans in her waffles, but I didn’t have any, so I decided to use walnuts instead.

2 c all-purpose flour
2 tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 c chopped walnuts
2 c buttermilk
2 eggs
3 tbsp vegetable oil
1/2 tsp vanilla extract

Whisk flour, brown sugar, baking powder, baking soda and salt in a large bowl. Whisk buttermilk, eggs, oil and vanilla in a medium bowl. Whisk milk mixture into dry ingredients just until the dry ingredients are thoroughly moistened. Gently stir in walnuts. Prehead waffle iron. Pour 1 c batter onto iron and close top. Bake until brown, approximately 4 minutes.

Whoa… I think I just found my go-to waffles. ­čśë
