Master Baker Challenge/March – G’s Wacky Cups

I became tired of lurking and finally decided to submit an entry into the Master Baker challenge. Since Easter fell way early this year, the chosen ingredient turned out to be Easter Candy. I love this cupcake recipe because it was handed down to my mom by my grandmother (whom I never had the chance to meet). Plus, it combines coffee and chocolate… two of my most favorite things. 🙂

G’s Wacky Cups

1-1/2 c flour
3 tbsp Dutch process cocoa powder
1/2 tsp salt
1 c sugar
1 tsp baking soda
2 tsp vanilla extract
1 tsp white vinegar
6 tbsp vegetable oil
1 c coffee, brewed

Preheat oven to 350 degrees. Place dry ingredients in a bowl. Using a whisk, mix throughly. Make 3 holes in the mixture. Pour the vanilla into one hole, the vinegar into another, then the oil in the last hole. Pour the coffee over the top and mix thoroughly. Fill cupcake pans 3/4 full and bake for 20 minutes. Remove when done and let cool in pans for 10 minutes. Remove cupcakes from pans and place on rack to finish cooling. Frost when cool.

1/2 c unsalted butter, softened
3 c powdered sugar
1 tsp vanilla extract
2 to 3 tbsp milk

Beat butter with an electric mixer at medium-high speed until creamy. Gradually beat in sugar until smooth. Beat in vanilla and 2 tbsp milk, adding additional milk, if necessary, for desired consistency.

It’s Jelly Bean time!!

For the topping, I added several drops of green food coloring and a splash of water to a small bag of shredded coconut. I then sprinkled some on top and carefully placed a few jelly beans in the “nest.” 🙂

Although I normally don’t like shredded coconut, the green “grass” combined with the chocolate & coffee flavors turned out to be really yummy! And… they turned out so cute! 🙂
