Oven-Roasted Rosemary Potatoes

For this recipe, I used small to medium Yukon Gold Potatoes we bought this weekend on a trip to Central Market (I have a serious addiction to this place, people).

Oven-Roasted Rosemary Potatoes

15-20 small to medium Yukon Gold Potatoes
5-6 sprigs fresh rosemary, minced
2 tbsp fresh garlic, minced
pinch of salt
pinch of fresh ground pepper
olive oil

Preheat oven to 375 degrees. Quarter the washed potatoes and arrange on a foil-lined baking sheet. Drizzle olive oil over potatoes, then sprinkle minced rosemary and minced garlic on top. Finish by sprinkling salt and pepper over potatoes then lightly shake baking sheet to coat all potato pieces. Bake for approximately 30-40 minutes.

So funny! I just made potatoes like this last night too. Yours look so good. i love roasted potatoes.

I love rosemary, and potatoes are one of the best ways to use it. Yum!
