After reading Elly’s post about her “Eat to the Beat” challenge, I figured this was as good a time as any to start participating in different challenges. Since I love the bluesy sound of Polk Salad Annie, written by Tony Joe White and performed by Elvis… I decided to make “Frito Salad Annie”.
I threw a surprise 30th Anniversary Party for my parents and it went perfectly with the Mexican menu! I also got to use my new food processor for the first time to shred the carrots! How did I ever live without this thing?!?!
Frito Salad

1 can pinto beans, drained
1 can black beans, drained and rinsed in cold water (optional)
1 can corn, drained
2 tomatoes, chopped (remove seeds & juice)
1 sm. onion, chopped
1 sm. bottle fat-free Catalina dressing
1 sm. bag of original Fritos
1/2 lb. cooked hamburger (optional – I did not use)
shredded lettuce
shredded carrots
shredded cheddar cheese
Mix all ingredients together in large bowl. Top with fat-free sour cream if desired.

Thanks for a great recipe. My husband loves Fritos and this made for a great fast weeknight dinner.
