Scratch Chocolate Waffles

With all the pancake talk on today’s WC board, I started to crave breakfast… for dinner. 🙂 So, once I got home from the gym, I made chocolate waffles. I know, I know… my workout was wasted. I did make the waffles a little healthier, though.

Before the love affair begins…

Scratch Chocolate Waffles

1-1/3 c all-purpose flour
2/3 c sugar (I used 5 tbs + 1 tsp Splenda)
1/4 c + 2 tbs cocoa powder
2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1 c milk (Skim milk for me!)
2 eggs (All whites, no yellows)
1/4 c vegetable oil
1 tsp vanilla extract

Combine flour, sugar, cocoa, baking powder, cinnamon and salt in large bowl. Whisk milk, eggs, oil and vanilla in medium bowl. Whisk milk mixture into dry ingredients until the dry mixture is thoroughly moistened. Let batter rest 5 minutes. Spray waffle iron with cooking spray. Pour 1 cup* batter onto the center of the waffle maker. Bake until set, 4 to 4-1/2 minutes. Makes 3 waffles.

*I have a small round waffle iron, so I use a cup of batter for each waffle. For larger irons, it might take 1-1/2 cups to 2 cups.

Chocolately goodness in breakfast form.
