If you’re looking for a quick and easy weeknight dinner, then you’ve come to the right place. These Almond-Crusted Chicken Tenders come together in no time. You could even prepare the coating mixture ahead of time, saving a few precious minutes to spend with your family, rather than standing around in the kitchen! Baking these chicken tenders locks in moisture and eliminates any grease you’d get from frying. They’re great with a side dish of Creamy Hash Brown Casserole, too!

Almond-Crusted Chicken Fingers

Yield: 4 servings

Serving Size: 3 tenders


  • 1/2 c sliced almonds
  • 1/2 c whole wheat flour
  • 1-1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dry mustard
  • 1/4 tsp Kosher salt
  • 1/8 tsp fresh ground pepper
  • 2 tsp extra-virgin olive oil
  • 4 lg egg whites
  • 1 lb fresh chicken tenders


Preheat oven to 450 degrees F. Set a wire rack on a foil-lined baking sheet and spray rack with cooking spray. Place almonds, flour, paprika, garlic powder, mustard, salt and pepper in a processor; process until almonds are finely chopped and paprika is mixed throughout (about 1 minute). With the motor running, drizzle in oil; process until combined. Then transfer into a shallow dish.

Whisk egg whites in another dish. Add tenders and turn to coat. Transfer each tender to the flour mix and coat evenly. Place tenders on rack about 2" apart from one another. Bake tenders until golden brown, crispy and no longer pink in the center (about 20-25 minutes).
